Tomato Butter

If you love tomatoes and you love butter, this is the perfect recipe to make. It’s not only easy and delicious, but there is no limit to what you can use it for. I have used it to make eggs, added it to a charcuterie board and grilled cheese – to name a few. Basically any instance that you use butter and you want to add a tomato flavor, get creative and throw it in!

Preparation

  1. Preheat your oven to 400 degrees.

     

    Rinse tomatoes and add them to a sheet pan. Drizzle with olive oil and sprinkle with flaky salt. Bake for 45 minutes. Meanwhile, take your butter out of the fridge and let it come to room temperature.

     

    Remove the tomatoes from the oven and let them cool to room temperature. 

     

    Add tomatoes to a large bowl and add the butter. Get your immersion blender going and mix until well combined. Cover and refrigerate until solidified. Will keep for 4-5 days refrigerated and also freezes really well. If you want to freeze it, shape it into a log and wrap it completely in parchment paper. Cut off pieces as you need and enjoy!
