This will end up in your baking rotation! Lots of chocolate and chewy goodness!

  1. Preheat the oven to 350 degrees F.
  2. In the bowl of your stand mixer, combine flour through the oats and whisk it all together. Make a well in the center of your dry ingredients and add coconut oil through the vanilla. Place the bowl back on your stand mixer with your paddle attachment and mix on low until combined. Once combined, slowly add in the chocolate chips until mixed through.
  3. Cover the bowl and put the dough in the refrigerator for 30 minutes.
  4. Once the dough has had time to chill, remove it from the fridge. Cover two large baking sheets with parchment paper and using a tablespoon, add your dough to the baking sheet. Keep about a 1” space between the cookies. Sprinkle them with flaky salt and bake for 10-13 minutes. Remove from the oven and flatten with a spatula.
  5. Allow cookies to cool for 10 minutes and enjoy!
