Chop the red onion and add to a small bowl. Cover with water and add a splash or two of vinegar to the bowl (I usually use red wine vinegar). This is purely optional, I am someone who has a hard time eating raw onions and find that this takes the bite out and makes the onion much more digestible.

Next get your tomatoes ready. If you have a food/chop option on your blender, this is an incredibly easy process (you can also mix with an immersion blender) cut the tomatoes in half and throw them in the blender. Add your jalapeno, cilantro, juice of 1 lime and salt. Drain the red onion and add to the blender. Process until fully mixed. Add additional lime juice and salt if desired.
If you do not have a regular or an immersion blender, you can always chop by hand, but this will be more time consuming.
