A perfectly balance of sweet and savory with no refined sugar added
Ingredients
2cups gluten free flour
2teaspoons baking powder
pinch of salt
1/2cup olive oil
2/3cup maple syrup (you can go slightly over if you would like it a bit sweeter, but stay under 3/4 cup)
2large eggs
2pears halved and sliced, the other half diced (you will combine the diced pieces into the cake, the slices will be at the top)
1apple halved and sliced, the other half diced (you will combine the diced pieces into the cake, the slices will be at the top)
1/3cup buttermilk
1/2tsp cinnamon
1/4tsp cardamom
1/4tsp all spice

Preheat oven 350°F and grease an 8” round cake or tart pan with olive oil.

Whisk dry ingredients together in a separate bowl

Halve and core pears and apple, slice half and dice the other

In your stand mixer bowl (or use a handheld electric mixer) place oil, maple syrup and eggs. Using the whisk attachment whisk together at medium/high speed until thick and pale.

Add the buttermilk and mix slowly until combined.

With the mixer on slow speed, mix in flour mixture until just combined. Scrape down the sides then beat at a higher speed for 30 seconds.

Remove the bowl from the mixer and fold in the diced pear and apple.

Scrape the cake batter into the prepared pan.

Top with pear and apple slices into whatever pattern you desire (I got all different colored fruit so it looked a little more festive).

Bake for 55-60 minutes on your top rack (my rule of thumb is as soon as you start to smell it, check it).
